Serves 4

 

Ingredients:

1 onion, chopped

1 green chilli, seeded and finely chopped

2 (170 g) tins tuna, drained

1 medium rooster potato, boiled and mashed

100 g celery

120 g panko breadcrumbs

2 eggs

What you’ll need from the store cupboard:

½ tbsp. olive oil

1 tbsp. fresh ginger, grated

Salt, as required

 

Instructions:

Preheat the Air fryer to 200 ºC and grease an Air fryer basket. Heat olive oil in a frying pan and add onions, ginger, and green chilli.

Sauté for about 30 seconds and add the tuna. Stir fry for about 3 minutes and dish out the tuna mixture onto a large bowl. Add mashed potato, celery, and salt and mix well.

Make 4 equal-sized patties from the mixture. Place the breadcrumbs in a shallow bowl and whisk the egg in another bowl.

Dredge each patty with breadcrumbs, then dip into egg and coat again with the breadcrumbs.

Arrange tuna cakes into the Air fryer basket and roast for about 3 minutes. Flip the side and roast for about 5 minutes.

Dish out the tuna cakes onto serving plates and serve warm.
