Serves 4

 

Ingredients:

4 potatoes, peeled

15 g butter

½ of brown onion, chopped

2 tbsps. chives, chopped

60 g Parmesan cheese, grated

What you’ll need from the store cupboard:

45 ml rapeseed oil

 

Instructions:

Preheat the Air fryer to 200 ºC and grease an Air fryer basket.

Coat the potatoes with rapeseed oil and arrange into the Air fryer basket.

Air fry for about 20 minutes and transfer into a platter.

Cut each potato in half and scoop out the flesh from each half.

Heat butter in a frying pan over medium heat and add onions.

Sauté for about 5 minutes and dish out in a bowl. Mix the onions with the potato flesh, chives, and half of cheese.

Stir well and stuff the potato halves evenly with the onion potato mixture. Top with the remaining cheese and arrange the potato halves into the Air fryer basket.

Air fry for about 6 minutes and dish out to serve warm.
